Lemon Chia Balls
1 cup organic raw almonds
1 cup organic raw cashews
1 cup organic desiccated coconut
2 cups organic dates
Zest of 1 large organic lemon
Juice of organic lemons
4 tablespoons chia seeds
Description:
Soak nuts.In a blender place nuts, coconut, lemon rind and chia seeds and blend till quite fine. Add dates and lemon juice until the mixture comes together. You can either press this into a tray lined with baking paper, or rolls into balls. Refrigerate
You can also roll in coconut if desired…
If you make it into bars, slice into slices after its been refrigerated…Delicious!
